Bulmer's Mussels

Ingredients
60g of Butter
1 cup of finely diced celery
Half a red onion finely diced
2.5kg of fresh mussels (cleaned and de-bearded)
2 small bottles of Bulmer's
1 lemon
Handful of parsley roughly chopped

Method
1) Melt the butter in a large saucepan.
2) Add finely diced celery and red onion into the pan and cook for 2 - 3 minutes until soft.
3) Add in the 2.5kg of mussels and stir
4) Pour in 2 bottles of Bulmer's and cover the saucepan, let cook for 5 - 6 minutes or until the mussel shells begin to open
5) Remove from saucepan and place in a big serving bowl

6) Garnish with freshly chopped parsley and a squeeze of lemon juice over the top
